My mother-in-law is famous for bringing this salad to family affairs. She usually adds less sugar though.
1 1/2 c. Acini di Pepe macaroni
2 egg
1 c sugar
1 1/3 cup pineapple juice (from canned fruit)
1 TBSP lemon juice
1 1/2 TBSP flour
1/2 tsp salt
Cook acini de pepe macaroni in boiling water; simmer for 20 minutes. Rinse in cold water until cool. Combine next ingredients and cook until thick. Add it acini de pepe. Let it set overnight in refrigerator.
Add:
1 can of crushed pineapple, drained, reserving juice
1 can of pineapple tidbits, drained
2 cans mandarin oranges, drained
1 c miniature marshmallows
Fold in 1 small bowl Cool Whip.
Can fold in sliced bananas or apples before serving if wanted
