Peppermint Pie



This pie is a little different but it is good! I got the recipe off the Food Network from Paula Deen....it is a great Christmas treat!



  • 1 envelope plain gelatin

  • 1/4 cup cold water

  • 1/2 cup heavy whipping cream

  • 1 1/2 cups heavy cream, whipped

  • 8 oz peppermint candies, softish type (*Bob's brand works best*)

  • 1 chocolate cookie crust

  • crushed peppermint, for garnish

Soften gelatin in water and set aside. Put 1/2 cup heavy cream in a small saucepan with candies and cook over low heat until candy melts. Add gelatin to mixture and mix well. Let cool and fold in whipped cream. Pour into crust, sprinkle with crushed peppermint candies and chill thoroughly.


*Bob's brand are sometimes harder to find, I've been able to find them at Walmart on the candy isle with the other bags of candy.

Cream Cheese Pie

I am not too much of a pie maker but this one is quick to whip up when you are short on time.

1 - 8 oz. cream cheese
1/2 c. sour cream
1 - 8 oz. cool whip, thawed
1/3 c. sugar
1 tsp. vanilla

Mix together and pour into a 9 inch baked crust or graham cracker crust. Cool in refrigerator. When ready to serve top with any pie filling or fruit.

Sweet Potato Pie

This yummy pie is my Brother Ryan's recipe. This is good to have anytime of the year. Also, make sure you use sweet potato's not yams. This pie will get a good unexpected response from those who eat it when they learn you use sweet potatoes.

2 C. Boiled Sweet Potatoes
1 Can sweetened condensed milk
1 TBS or 1 Pod of Vanilla
2 eggs
1/4 tsp salt
1 C sugar
1 cube of butter

Mix ingredients together with hot sweet potatoes. Pour into pie crust. Bake at 350* for 30 min

Cool N' Easy Strawberry Pie


2/3 cup boiling water
1 pkg. (4-serving size) Strawberry Flavor Gelatin
Ice cubes
1 tub (8 oz.) Whipped Topping, thawed (Lite tastes fine)
1 cup chopped, fresh strawberries
1 graham cracker (or Oreo) crumb crust
1 cup sliced, fresh strawberries

STIR boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
ADD whipped topping; stir with wire whisk until well blended. Stir in chopped strawberries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.
REFRIGERATE 6 hours or overnight until firm. Top with sliced strawberries. Store leftovers in refrigerator.

ApPlE PiE - SuGaRfReE

3 cooking apples
11 oz. jar of Steel's Gourmet Honey Nature Sweet
2 Tablespoons margarine
2 Tablespoons corn starch
2 Tablespoons raisins (optional)
nutmeg & cinnamon to taste


Peel, core and slice apples.
Mix remaining ingredients.
Pour into pie shell.
Bake 400 degree for 45 minutes on cookie sheet.

Orange Cream Cheese Biscuits

Orange Cream Cheese Biscuits

3 cups Bisquick Original Baking mix
2 tsp. grated orange peel
3/4 orange juice
1 pkg. (3 ounces) cream cheese, softened
2 Tbs. orange marmalade
Sugar

Heat oven to 450 degrees. Mix baking mix, orange peel, and orange juice until soft dough forms; beat vigorously 30 seconds. Turn dough onto surface generously dusted with baking mix; roll in baking mix to coat. Knead dough 10 times.

Roll dough 1/2 inch thick. Cut with 2 1/2-inch round cutter dipped in baking mix. Place on ungreased cookie sheet. Mix cream cheese and marmalade. Spoon about 1 teaspoon cream cheese mixture onto center of each circle; sprinkle with sugar.

Bake 8 to 10 minutes or until golden brown. Makes about 15 biscuits.

Serve with: These tasty biscuits would complement any egg dish. Or for a casual breakfast, serve with vanilla yogurt and fresh fruit.

Special Touch: Consider using a unique cookie cutter, such as a bird, heart or star, to produce fun-shaped biscuits.
