Animal chips/fruit kabobs

Both of these recipes are from family fun, man I' am soooo excited for summer!


Animal Chips

RECIPE INGREDIENTS:
1 large flour tortilla
Cooking spray
Salt
1. Use animal-shaped cookie cutters to cut shapes from a large flour tortilla.

2. Arrange the animals on a baking sheet, lightly coat them with cooking spray, and sprinkle them with salt.

3. Bake at 350° for 5 to 7 minutes, and your chips are ready for a dip in salsa or guacamole.



Fruit Kabobs

RECIPE INGREDIENTS:
1 large red apple, cut into 8 wedges
6 marshmallows
1 small jar of creamy peanut butter
1 large banana, cut into 1-inch slices
1. To make a kebob, carefully push a skewer through the ingredients, starting with a piece of apple, then a marshmallow, then banana, then another marshmallow. Spread a dollop of peanut butter on top of the marshmallow. Now, skewer a piece of banana and another marshmallow (with more peanut butter) and finish with a piece of apple. Repeat with a second skewer. Makes 2 kebobs.

Summer treats

Make Your Own Pudding Pops - 1 small pkg. instant pudding mix--any flavor 1 3/4 cup lowfat milk, Mix as directed on package. Once again, pour into molds or small cups and add sticks. Freeze.


Quick Banana Ice - Take a few bananas and mash them in a bowl. Cover and place in the freezer for about 30 minutes. Remove from freezer, fluff up with fork for a healthy, ice cream like treat.

Pita Pizza – Spread a little tomato sauce on a pita bread and cut into small triangular pieces. Top with a little grated cheese and place in a moderately heated oven for about 5 to 10 minutes until the cheese melts and starts to bubble.

Sweet Tortilla Shapes – Using small fun shaped cookie cutters cut fun shapes out of a tortilla (wrap). Place on non stick cookie sheet and lightly brush with a little butter. Lightly sprinkle (you only need a little) with a mixture of 1 part cinnamon and 3 parts brown sugar and bake in a moderately hot oven for 10 minutes for a sweet and crispy treat.

Banana Wheels – Place a cup or so of cheerios in a plastic bag and using the back of your hand or a rolling pin flatten until mixture resembles fine crumbs. Slice a banana into rounds and place a few at a time in the plastic bag. Shake lightly to cover the banana pieces (banana wheels) with the cheerios mixture.

Bugs in the Bed

  • 4 green apples
  • 1 cup chunky peanut butter
  • 1/2 cup chopped peanuts (optional)
  • 1/2 cup of Rice Krispies
  • 1/4 cup of raisins

Cut the apples into quarters and remove the core, leaving it hollow for the filling. Mix the peanut butter, chopped peanuts, cereal and raisins. Spoon them into the apple hollows!

This recipe is one I used back in my days at the Boys and Girls Club, some kids find this really fun and other are totally grossed out by it! But they are a yummy, easy and fairly healthy snack!
