- 1 lb chicken thighs
- 2 cup rinsed and sorted lentils
- 2 (14 oz) cans diced tomatoes - or 1 can stewed and 1 can diced
- 2 cups chopped carrots
- 1 med chopped zucchini (or you can use spinach)
- 1/2 cup chopped onions - diced
- 4 1/2 - 5 cups chicken broth
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp Italian seasoning
- 1/2 tsp garlic powder
- salt and pepper to taste
- 1 cup mushrooms (optional)
Cook on high for 5-6 hours
