Chocolate Chip Mint Cookies

These are really yummy and unique with the Hickory Farm Melt Away Mints. Try them! I guarantee you won't be disappointed!


* 2 ½ cups flour
* 1 tsp baking soda
* ¾ cup margarine, melted
* 1 ½ cups brown sugar
* 1 egg
* 2 tsp vanilla
* ½ cup chocolate chips
* ½ cup, Hickory Farms melt away mints
*

Preheat oven to 350*.
Line 3 cookies sheets with no-stick foil.
In a bowl combine margarine and sugar. Mix.
Stir in egg and vanilla. Mix.
Add flour and baking soda.
Stir in chips.
Drop cookies onto prepared sheets, about 1 tablespoon each. Place them about 2 inches apart, as these do spread a bit.
Bake for 9-11 minutes.

Dough will be sticky.

Pumpkin Chocolate Chip Cookies

These are so good and actually good for you!

1 spice cake mix
1 small can of pumpkin
1/2 bag of semi sweet chocolate chips

Mix the first 2 things together till well blended. Add the chips and fold them
in. Drop by spoonful on a greased cookie sheet. Bake at 350 for 8-10 minutes
and enjoy!

Soft Sugar Cookies

This is my grandma's recipe. She always makes them at Christmas and Valentine's Day
(and my grandpa helps her frost them because he says she doesn't put enough frosting on!)
Anyway, they are my FAVORITE so I have taken up the tradition as well, except I also make them at Halloween and Easter and any other time I can justify it! :) Oh, and I usually half the recipe and still get 12-15 big cookies.
Soft Sugar Cookies:
Cream:
1 1/2 C. sugar
1 C. shortening
Add:
2 eggs
Alternately add
3 C. flour with:
1 teas. baking soda
2 teas. baking powder
added to the flour
Add:
1 C. Buttermilk (I used 1 C. milk w/ 1 TBS lemon juice added to it)
and 1 teas. Vanilla
Add 3 more C. flour.
Roll and cut out in shapes. Bake at 400* for 7-10 minutes until BARELY browning at the edges. Frost with colored frosting and add sprinkles if you like. YUM!

Spider Cookies



Trix or Treat Spider Cookies

1 package Betty Crocker Double Chocolate Chunk Cookie Mix
1 can of chocolate ready-made frosting
1 can of vanilla ready-made frosting
24-48 Trix orange and green sweetened corn puffs
Toothpicks
Re-sealable plastic bags

* Preheat oven to 350 degrees.
* Mix ingredients for cookies as directed on the package.
* Use a small ice cream scoop to get similar sized cookies or just use a spoon and vary the amount for different size cookies.
* Place cookie dough on a parchment covered baking sheet.
* Bake for about 7-8 minutes.
* Cool completely on a wire rack.
* Makes about two dozen cookies.

To decorate:

* Spread chocolate frosting on the top of each cookie.
* Fill a re-sealable plastic bag with a couple of heaping spoonfuls of frosting and snip a tiny hole out of the bottom of one corner.
* Pipe on three circles of white frosting for each cookie. Start in the middle with the smallest circle and work your way out.
* Take a toothpick and beginning in the center, drag it lightly through each circle. Repeat all the way around the cookie.
* Take remaining frosting and separate it into two bowls. Tint one frosting with orange icing color and the other with green.
* Fill two re-sealable bags with the orange and green frosting and snip off the corner of each.
* Pipe eight small legs with each color and place a matching orange or green Trix Cereal puff on the top of each pair of legs. Add one or several spiders on each cookie.

PW's Oatmeal Crispies modified by Jaime

I have modified it a little bit below.

- 1 C. Shortening
- 1 C. Brown Sugar
- 1 C. sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 C. Flour
- 1 tsp. salt
- 1 tsp. baking soda
- 3 C. quick oats
- 1/2 finely chopped walnuts ( or pecans, w/e you want)
- 1/2 bag chocolate chips
- 1/2 bag toffee bits

Cream sugars, shortening, eggs and vanilla. Add rest of ingredients. You know the drill:)

Oatmeal drop cookies

I wanted to make some cookies that had oatmeal in them and try a new recipe. Now if your husband is anything like my husband, whenever he hears the word oatmeal cookies, he gets a disgusted look on his face:) I knew these would be perfect because they have chocolate in them which help Steve overlook the oatmeal part. They turned out really good and is a great cookie to dip in milk:) This is from All Recipes.


  • 1 cup flour
  • 1 cup old-fashioned or quick-cooking oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 6 (1 ounce) squares BAKER'S Semi-Sweet Baking Chocolate, coarsely chopped ( I used chocolate chips)
Mix butter,sugars,pb,egg and vanilla together. Add rest of ingredients.
Cook at 375 for 10-12 min.

Peanut Butter Blossoms


Peanut Butter Blossoms Ingredients:
48 HERSHEY'S KISSES Brand Milk Chocolates
1/2 cup shortening
3/4 cup Creamy Peanut Butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar
Directions:1. Heat oven to 375°F. Remove wrappers from chocolates. 2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture. 3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet. 4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

Best Chocolate Chip Cookies EVER!!!

So I made some cookies for a friend the other day and she told me I need to put it on the blog. So here is the recipe:
Ingredients:
*1 cup butter or margarine, softened
* 3/4 cup white sugar
*1 cup brown sugar
*2 eggs
*1 teaspoon Vanilla
*3 cups flour
*3/4 teaspoon Salt
*3/4 teaspoon baking soda
*1 (12oz.)bag of Chocolate Chips
**Cream together butter,sugars,eggs, and vanilla. In a separate bowl sift together flour,salt,and baking soda. Add to creamed mixture and beat well. Stir in chocolate chips. Drop onto greased cookie sheet by heaping tablespoons. Bake at 350* F. for 8-10minutes. Makes about 3 dozen.
So try it out and you will be the rave of the party!! (I think anyways!)

Softest Ever Sugar Cookies & Frosting

You may not think that this is a Thanksgiving side, but I'm assigned to bring this to every Family get together, Thanksgiving, Christmas, you name it. Suppossedly they are low-fat, (not the frosting) but they are way too yummy to believe it. I have to quadruple the batch every time. Tip *set out your butter for the frosting before making the cookies

Lowfat Sugar Cookies

Cream together
1 C. Sugar
1/2 C. shortening
1 egg
1 C. milk
1 tsp. vanilla

Mix in
1/2 tsp baking powder
1 tsp. Baking Soda
1/2 tsp. salt

Add
4 C. flour (may need more, just add enough flour to make your dough firm)

Roll out leaving thick on floured surface and cut into your favorite Shape
Bake at 325 for 10 minutes

makes 2 dozen


Butter Decorator's Icing
(This amount will frost about 4 batches of the sugar cookies)


Mix together and beat for 5 minutes

1/2 C. milk
1 stick of room temp margarine or butter - do not melt
1/4 C. shortening (can add up to 1 cup)
2 tsp. vanilla
1/4 tsp. salt
7 1/2 C. Powdered Sugar (whole bag)

*add more shortening for firmer icing

*add 1 1/2 C. cocoa for chocolate icing

Lowfat Pumpkin Cookies

These are my favorite. My husband loves them too! They don't taste lowfat at all!

3/4 cup brown sugar
1/4 cup softened margarine
3/4 cup pumpkin
1 egg
1 1/4 cup flour
1/2 tsp baking pwd
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp allspice
1/8 tsp salt
1/8 tsp nutmeg

Cream brown sugar and margarine till fluffy. Beat pumpkin and egg and add to sugar and marg. mixture. Combine remaining ingredients. Add chocolate chips if desired. ( I like it better without them) Drop- flatten top. Bake 350* for 18 min.

Pumpkin Spice Cookies or Muffins

1 sm can of pumpkin
1 box of Spice Cake mix
1/3 Cup water
1/2 bag of chocolate chips

Add all ingredients and mix!
Cook at 350* about 8-11 minutes.

***You can drop them onto a cookie sheet for cookies or into muffin papers for muffins. Delicious and EASY!!

Sugar-Free Oatmeal Cookies

INGREDIENTS
3 Banana, medium, fresh , mashed
2 cup quick cooking rolled oats
1/2 cup seedless raisins
1/3 cup Margarine, 80% fat , melted
1/4 cup fat free milk
1 tsp vanilla extract

DIRECTIONS
1 Preheat your oven to 350 degrees F. 2 Mix all of the ingredients in a large bowl and let stand for 5 minutes so that the oats will absorb excess moisture.3 Drop dough by heaping tablespoons onto ungreased cookie sheets. Bake for 15 to 20 minutes. Let cool for 1 minute on baking sheets and then transfer to wire racks to cool completely. Makes 36 servings

Oreo Cookies

Cookie:
1 box deviel's food cake mix 3/4 C. solid shortening
2 eggs

Mix together and roll in med size balls. Place on ungreased baking sheet. Bake at 350* for
9-10 minutes. Cool

Filling:
1 (8 oz.) Pkg. cream cheese 1/4 C. butter
2 3/4 C. powdered sugar 1 Tbsp. Vanilla

Combine filling. Spread filling between 2 cookies.

Yummy Good Sugar Cookies

A friend of mine (Lynn O.) makes these wonderful, soft, sugar cookies. Mine never turn out as good as hers but I have included her notes below. Enjoy!

1/2 C shortening

1/2 C butter or margarine

1 C sugar

1 egg

2 TBSP milk

Mix until creamy. Add:

1/2 tsp baking soda

3/4 tsp salt

2 1/2 C flour

Mix well. Let chill for at least 1 hour. Roll out on floured board and cut out with cookie cutters. Bake at 350-degrees for 8-10 minutes.


A couple notes from Lynn. "I've tried both the butter and margarine and can't tell too much difference, so whichever you have on hand. The dough is quite soft, so quite a bit of flour while you are rolling it out is helpful. Also, the longer you chill it, the easier it seems to be to roll out, but I've done it in just the hour she recommends, too. And, as far as the baking goes...they ALMOST look like they are not done when you take them out of the oven (not brown on the edges). That's the secret to keeping them nice and soft! Oh, and I usually AT LEAST double this...usually quadruple!"

Hamantaschen Cookie


1 stick butter, melted
1/4 cup sugar
1 egg
1 tablespoon orange juice
1/2 teaspoon vanilla extract
1 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
Jam or preserves


1.
Combine the butter and the sugar in a large bowl. Whisk in the egg, orange juice, and vanilla extract. In a separate bowl, combine the flour, baking powder, and salt, stirring well.
2. Add the flour mixture to the butter and sugar and blend until a firm dough forms. Shape it into a flat disk, wrap it in plastic, and chill it for 1 hour.
3. Heat the oven to 375°. Roll out the dough on a floured surface to a 1/8 inch thickness, then cut out 2 1/4- to 2 1/2-inch rounds and place 3/4 teaspoon of jam or preserves in the center of each one.
4. With your finger, dampen the edges of the dough with water, then firmly pinch together the dough in 3 places to form a triangle around the filling.
5. Bake the cookies on an ungreased baking sheet for 8 to 10 minutes, until the edges are slightly browned. Transfer to a wire rack for cooling. Makes 2 to 2 1/2 dozen.

My dad and I have always loved the jam filled Peppridge farm cookies and I think that these are a good alternative:)

Almond Joy Cookies

If you love almond joys then you will love these. These are my dad's and I's favorite cookies.

1c. butter, softened
1 1/2 c. sugar
1 1/2 c. brown sugar
4 eggs
4 tsp. vanilla
4 1/2 c. flour
2 tsp. baking soda
1 tsp. salt
5 c. chocolate chips
2 c. flaked coconut
2 c. chopped almonds

combined butter, sugars, eggs, vanilla together. then add the rest of the ingredients. drop in round balls and bake at 375 for 8 to 10 minutes. allow cookies to cool for 5 minutes before eating.

Molassas Cookies

These cookies are the BEST gingersnaps ever! They are really soft and easy to make.

1 1/3 c. vegetable oil
2 eggs
2 c. sugar
8 Tbsp. molassas
4 c. flour
1 tsp. salt
2 tsp. ginger
4 tsp. soda
2 Tbsp. cinnamon

Combine sugar and eggs and beat. Stir in molassas and dry ingredients. Mix well. Roll in balls and then roll in sugar. Bake at 350 for 8 minutes. Make um' big and make a lot cuz' their going to go FAST!!

Neiman-Marcus Cookie

For those of you that have had these at the store you'll know they are rather divine! The original recipe makes 112 cookies, but can easily be halved !

  • 2 cups butter
  • 24 oz chocolate chips
  • 4 cups flour
  • 2 cups brown sugar
  • 2 tsp soda
  • 1 tsp salt
  • 2 cups sugar
  • 1 8 oz Hershey Bar (grated)
  • 5 cups blended oatmeal
  • 4 eggs
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 3 cups chopped nuts, of your choice

Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars.

Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder and soda. Add chocolate chips, Hershey Bar and nuts.

Roll into balls and place 2 inches apart on a cookie sheet

Bake for 10 minutes @ 375

Snicker Cookies

1 C margarine (softened)
1 C Creamy Peanut Butter
1 C sugar
1 C brown sugar
2 eggs
2 tsp vanilla
3 C flour
1 tsp. baking powder
1 tsp. baking soda

Cream together margarine, peanut butter, both sugars until well mixed. Mix together dry ingredients and add to other mixture. Mix well. Spoon out enough dough to cover a small peice of snicker candy bar ( I use the bite sized ones). Place on cookie sheet. Bake at 350 for 10 minutes. Drizzle glaze onto cooled cookies.

GLAZE:
1 C powdered sugar
2 Tbl. cocoa
1 T. Milk
